Vegan Baking is Clearly Better! :D,
By
This review is from: 100 Best Vegan Baking Recipes: Amazing Cookies, Cakes, Muffins, Pies, Brownies and Breads (Paperback)
I received this recipe book for Christmas from a decidedly non-vegan individual who nonetheless seems to greatly enjoy the benefits of contributing to my vegan baking repertoire, lol. As someone whose favorite thing in the world is serving something no one knows is vegan, subsequently getting amazing reviews(and most of all, stunned reactions when I say it's animal-free), I LOVED this recipe book!It is a GREAT book; it has a bunch of the classics as well as some really out-there recipes. My absolute favorite is the Boston Cream Cake: it's to DIE for(it's so moist but not gooey), and it looks very impressive as well! I've wowed many a party, none of whose attendees would accept that it was vegan. I love the chocolate mocha cookies as well(perfect for when guests pop in for tea), and the red velvet cupcakes(topped with a candle each, they're my favorite substitute for a birthday cake)!!! One thing with many of the recipes: I've found that using wax paper, for which most of the cookie recipes call, to not work at all. Ive wasted a few recipes because the wax paper essentially cemented into the sugar-high cookies, and became inseparable. I would recommend using a Silpat or other silicone pan liner for the cookie recipes; these work beautifully and are far less messy and less wasteful. This is a great book for the vegan and the non-vegan; with a hundred(an impressive number!) recipes, there is something for everyone!! My favorite vegan baking resource to date since I became vegan six years ago.

I adore this book!!! The recipes are delicious (you must try the banana cake, talk about best cake ever - vegan or otherwise), and, most importantly for the aspiring vegan baker, the book is so accessible and easy to follow. Recipes presented run the gambit from brownies to two-tier cakes to puff pastry, but the instructions in the book are so clear and welcoming that you don't feel intimidated at all to give these recipes a try. So far, aside from the aforementioned delicious banana cake, I've made the gas station pies (also turned out terrific) and the oatmeal earth bars (a very original dessert made from cooked oatmeal that I became addicted to). I have a LOT of vegan cookbooks, but this book is definitely one that I will be returning to again and again. Can't wait to try the Boston Cream Pie and Black Forest Cake recipes!!

Some good, some not so good,
This review is from: 100 Best Vegan Baking Recipes: Amazing Cookies, Cakes, Muffins, Pies, Brownies and Breads (Paperback)
This was my first vegan baking cookbook that I bought and I have mixed feelings about it. I have made quite a few recipes from it and some have turned out fantastic while others have turned out not the greatest. If you love sweets then this book its probably great for you. I personally dont like things to be too sweet and i have found that with almost every recipe i have had to cut back the sugar tremendously.-the gingerbread on pg 73 has turned out every time, even though i usually increase the amount of ginger a little bit -the sunshine loaf on pg 71 is one of my favorite recipes, but i have made it numerous times with exactly what the recipe calls for and it always comes out as a bit of a soggy mess. I have gotten into the habit of cutting out most of the milk to reduce the moisture to make something that is more bread-like than soggy loaf-like -saucy apple bread on pg 78 always comes out really great, even without the topping -I made the raspberry lime muffins once and dont really have and desire to make them again. i found the flavors were not powerful enough -I made the lemon almond torte and it came out quite well (i made it in celebration of kate and williams wedding haha) -I made the apricot bars, reduced the sugar and still found them too sweet to eat -(i reduced the sugar in all of the above recipes usually by half) In general I have found that the majority of the recipes rely on sugar rather than spices and extra flavors. I have had to modify (usually cutting out most of the sugar and adding extra spices) most of the recipes to come out with something that is really worth eating. I made the ultimate brownies today and was sadly very disappointed. I went out and bought the best chocolate i could find and they came out dry and crumbly rather than fudgy delish wonders. I havent made too many cookie recipes because quite a few of them ask for a whole cup of margarine and sometimes up to two cups of sugar. However the majority of the recipes are quite simple to make and the instructions are easy to follow. The recipe for the puff pastry (114-115) is rated as more difficult and i found it to be quite easy. Another great thing about this book is that it doesnt ask for any artificial egg replacers or anything. It usually relies on soy yogurt or flax eggs which is a bonus. So if you aren't too health conscious and dont mind having baking with a bit more sugar then i would most definitely recommend this book for you. On the other hand, if you are a bit more picky and would like to lower your sugar consumption then this is most definitely not the book for you. You can modify the recipes a little bit to adjust to your standards but they might not turn out the greatest.
