I was looking for recipes for cooking tagines in a Tagine pot, not in the oven. Tagines are prepared low-and-slow on the stovetop, not oven baked or quick fried. It takes HOURS to meld the flavors and tenderize the proteins, and this simply can't be done in the limited amount of time allowed for these recipes.

Most of the recipes in the section on tagines are actually more reminiscent of an oven casserole. The remaining ones are quick-fried in a saucepan. If it's simple pseudo-Moroccan flavor you are looking for, this book is pretty good. If you are researching cooking in a Tagine pot, this is not it...

I was thinking that they would have more recipes for cooking in the TAGINE, but really the book is more adapted to first off cooking on the stove top or in the oven by conventional means and I was actually looking for a book that told me HOW to use the Tagine I bought. The recipes were fine though.
