This book has several things to love. It does not use the "fake meat" variety of ingredient much at all. Instead, it uses good, whole food ingredients. The recipes are not overly complex. In fact, most are downright easy. But, they are not so easy as to be the high-fat garbage vegan that is often seen. This is mostly healthy low fat or reasonable fat but yummy variety of recipes. It's a nice balance, and everything we have cooked so far has been very tasty. Finally, there are alternate preparations for each dish that show alternate spicing or twists to make that one dish into five or so other dishes that are similar but different enough to be considered different dishes. The one thing I don't like is the editors missed page numbers in references. A recipe may say "see page 22" for info on a certain ingredient, but the actual information may be on page 20. There are also minor instructions missing here and there (an ingredient will be in the ingredient list, but not in the preparation). Also, this is a UK published book, so US users need to be aware of vocabulary differences (bouillon in the book really means stock, for example, and not dried bouillon) Still, overall perhaps the best everyday and occasional special occasion vegan cookbook. Highly recommended.
