I RECENTLY PURCHASED THIS AFGHAN FOOD & COOKERY BOOK AND I WAS VERY EXCITED TO TRY ONE OF THE RECIPES. I TRIED BAKING THE ROHT AND FOLLOWED EVERY DIRECTION THAT WAS IN THE RECIPE. UNFORTUNATELY THERE WAS NOT ENOUGH LIQUID RECOMMENDED TO MAKE THE DOUGH. I BELIEVE THERE IS A MISTAKE IN THE AMOUNT OF OIL AND WATER. IT SAID TO PUT 3/4 CUP VEG. OIL AND 3/4 CUP WARM WATER. BUT FOR 5 1/4 CUP OF FLOUR, THIS MUCH LIQUID WON'T DO. I WAS LEFT SURPRISED BECAUSE I DID EVERYTHING RIGHT. SO I ADDED MORE OIL AND MILK INSTEAD OF WATER. I ALSO ADDED MORE EGGS AND SUGAR. IT TURNED OUT VERY GOOD AND IF YOU ARE INTERESTED IN MY RECIPE, PLEASE LET ME KNOW. I WILL BE DELIGHTED TO SHARE. THANKS......LIDA

I just can't say enough good things about this book!! My husband has fond memories of going to restaurants with his father and having delicious food. I wanted to be able to recreate those memories. I began searching the Internet for Afghan cookbooks and recipes nearly 10 years ago. I finally found this book, in its first edition, yet was not able to obtain a copy. After finding Helen Saberi through the Internet, she informed me that her book was coming out in second print. I waited nearly a year for it! And it is well worth the wait. Helen's recipes are more authentic than others that I have found; others have been "westernized". While she may have substitute ingredients, I think she stays true to the original recipes. The directions are easy to follow - you can't go wrong. The snippets of culture and history and background of spices just add to the flavor of the book. I continue to delight family and friends with these delicious Afghan dishes.

I was quite amazed to find how tasty Aghan food is, and even more shocked to see the great variety of food that they have. The recipies in this book are very straight forward and surprisingly easy to prepare. It seems to me that a great deal of effort was put into preparing the book because it has extensive cultural notes about the recipies and the country itself.
The only gripe I have about the book is that the cover tends to bend outwards really easily and stay bent, but that doesn't subtract from the enjoyment of book.
