Corn and Green Chile Soup Serves 4; heaping 3/4 cup per serving
Ready in no time, this chunky and spicy soup requires very little cleanup.
16 ounces frozen whole-kernel corn, thawed
12 ounces fat-free evaporated milk
2 ounces chopped green chiles, drained
1/4 to 1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/8 teaspoon cayenne (optional)
1/2 medium red bell pepper, finely chopped (optional)
3 medium green onions, finely chopped
2 teaspoons light tub margarine
1/4 cup shredded fat-free sharp Cheddar cheese
In a medium saucepan, stir together the corn, milk, green chiles, cumin, pepper, and cayenne. Bring just to a simmer over medium heat, stirring frequently. Remove from the heat.
Stir in the bell pepper, green onions, and margarine. Serve sprinkled with the Cheddar.
Cook’s Tip on Thawing Frozen Vegetables: To thaw frozen vegetables quickly, put them in a colander and run them under cold water until thawed. Shake off the excess water and drain well.

I was interested in this book because my husband had just lately been diagnosed with a heart condition and it was recommended that he lower his salt intake. The recipes are quite useful. I wish there was more about what to substitute for salt in recipes and what to expect if you omitted the salt. We found we could eliminate the salt altogether and it made no difference in flavor.

Have found the recipes to be tasty, not bland. Easy to follow recipes, would have most ingredients at home. Great working with other spices and seasonings. Would recommend.

Less salt with good taste! Dec 7 2011
By Pam - Published on
Format: Hardcover Verified Purchase
Due to high blood pressure, I have been trying to cook healthier for my husband and myself; mainly low-salt and low-fat.

This cookbook is informative: telling how to avoid hidden sodium in foods, list of foods high in sodium and healthy cooking techniques, plus many great recipes. We especially liked the Chicken, Barley and Spinach Casserole, the Chicken Dijon and Scalloped Potatoes. I just wish it included some photo shots of the dishes!

The ultimate low sodium cookbook April 20 2012

Finally, a low sodium cookbook worth buying. It has a good tutorial on sodium's place in our diet. The recipes are truly tasty and truly low sodium. The Kindle edition's bookmarking and notes capabilities are especially convenient. The barbeque sauce is especially good.

I've ordered several low sodium cookbooks after my husband was put on a low sodium diet. This one has some of the best recipes of all.

Low Salt Feb. 19 2012
By Faye A. Brick - Published on

I purchased this cookbook because I was put on a very low salt diet. It has proven to be a great addition to my cookbooks and I have used many of the recipes. My husband, who is a salt addict, also enjoys the recipes.

Great Alternative to how to eat properly April 5 2013
By shirley ozark - Published on
Format: Paperback Verified Purchase
I got this book because it fits in with the cardiac diet that my partner was told to low fat, low salt and low-cholesterol and this fits right in with what we needed.

The meals are easy to fix and are very good. It doesn't make us feel like we are going without things we like to eat, just in a different format of ingredients.

Yes, I would recommend this book to anyone I know that would have to watch what they have to eat to maintain good health.
