There were no instructions for use included with the product. I read about it's use in a food magazine, and on the internet. All of these recommended "seasoning" the tagine before use. They also said it could be used on top of the stove with a heat diffuser.
That's why I purchased the diffuser with the tagine.
When I called the company (because I was confused about it's proper use) they were very helpful. This tagine is porcelain, not clay, and it is glazed. It does not need to be seasoned, and it should only be used in the oven. It should be put in a cold oven, not a preheated oven. If it's put in a hot oven it could crack. I always use a 300 F oven, and I have had good results.
I wish they had included instructions in the box, and I regret purchasing the diffuser.
Pluses: It's attractive
Does not need to be seasoned.
Most food cooked in it is moist and tender.
It's easy to use: Put everything in-meat, veggies, seasoning. Put in cold oven, turn oven on and cook for a couple of hours. Check occasionally.
Negative: No instructions.
Can't be used on top of the stove.
