As a family we eat a lot of chicken breasts, as they are low in fat and carbs, but contain a decent amount of protein. But as Jenny points out, they can be pretty BORING. She has provided a wide selection of mouth watering recipes in this book, many of which suit my current health regime down perfectly, without skimping on taste! There are pastas, curries, burgers, casseroles, soups and plenty more besides. It's such a pleasant change to make Quick & Easy Lemon Chicken that actually is quick and easy, not to mention damn tasty!

I really fell in love with this cookbook as I read it. First Jenny has given me 31 ways to make some awesome chicken dishes ranging from stuffed chicken breast to chicken salad to Moroccan chicken to chicken pasta salad to chicken burgers and so on. There's a wide range of variety and the recipes look delicious. I make chicken all the time but end up using the same old, boring recipes. Now I have so many tasty and unique recipes to pick from and they're Easy!

My favorites are the Rosemary Infused Mascarpone Stuffed Chicken Breast and the Chicken and Roasted Vegetables Cooked Mediterranean Style.

Here is what I really loved about this cookbook.

1. The dishes look like original home-cooked recipes and truly are mouth-watering.
2. They are prepared with fresh, natural ingredients and so are healthy.
3. Jenny provides suggestions on what to serve with each dish: green salad, turmeric roast potatoes, rice.
4. All of the recipes can be done fairly quickly with prep and cooking times provided.
5. Jenny provides oven temperatures in Farenheit, celsius and by gas stove mark position which I have never seen before.

Finally there's a European flare to this cookbook. You'll find a few European terms for ingredients. For example: courgette (zucchini), petit pois (baby peas), cos lettuce (romaine). The European terms for these ingredients just added a wonderful touch to the cookbook.

If you have any interest in recipes for tasty, fast, healthy, original chicken dishes then buy this book. You'll be happy you did. Highly recommended.

I have been trying to cut back on the red meat for my family, however, my husband is a picky chicken eater, he will only eat chicken breast, and with my limited imagination our chicken dinners were always the same.

This book changes everything, I feel like I could have chicken every night of the month and our meals would have variety. A book dedicated to chicken breasts was a gold mine for me.

If your looking for some tasty recipes that appear to be quick and easy without a lot of can't find ingredients then you need this book.

Will be a valuable resource for me for a long time. Great job Jenny.

I agree with the reviewer who said they'd expected pictures. I also expect editing and typesetting that looks a little better than a word document saved-to-PDF. While the recipes themselves may be delish (I'll soon find that out) the book as an artifact, just looked amateur.

However, for free, I can't complain. So ... Great deal!

I suppose I'm a little spoiled concerning recipe books. I was hoping for pictures of how the food should look when finished. Also I was hoping for nutrition facts on each recipe or at least a calorie count. Other than that the recipes look pretty delicious and I'm in the process of trying out Curry Chicken today.
