This book is a combination vegan cookbook and nutrition primer. I've been using this book since it came out in 1989. Out of any cookbook I've had, I've used the most recipes from this one and have repeatedly made the recipes. The recipes use only natural whole foods, it isn't dominated by faux meats, dominated refined flours/grains, dominated by heaps of sweeteners or dominated by heaps of oil, etc. Very refreshing for a vegan recipe book! The recipes are fantastic "every day meals". Each recipe comes with nutrition information ( calories, sodium, protein, etc ... ).
One caveat. This book is *OLD*. The section that introduces vegan nutrition is significantly out of date. Get yourself a copy of "Vegan For Life" by Jack Norris R.D. to read up on current nutrition guidelines and get this book for the fantastic recipes.
