Product Description

This bittersweet chocolate couverture is excellent for eating, enrobing cakes with a thick layer of chocolate, preparing dense chocolate fillings and ganache, and for piping chocolate decorations. These callets are round drops of pure chocolate, easy to melt or temper, weigh, and store, and a divine taste in recipes calling for chunks of chocolate. The callets are made using 100% pure cocoa butter and a dash of vanilla that rounds off the taste with a slight sweet hint. Pure chocolate requires tempering to obtain a high gloss for chocolate making.

Great value, you get a flavor that is rich and very much chocolatey without any harshness, the bitter overtones are present without taking center stage, rather they are like a touch of spice. The mouthfeel is smooth, with gentle crunch at chew.

I'm planning on using these nuggets to make a cocoa drink for my best friend who loves spicy-hot, and chocolate. The other main flavor ingredient will be chipotle, which is smoky and seductively hot, meaning a warm heat that calls out to your taste buds, rather than clobbering them.

I purchased this for making fudge. I made 2 batches, one using the Callebaut dark chocolate and one using Bakers brand chocolate. In my unscientific blind taste test 2 out of 12 people preferred the Callebaut, the other 10 preferred the Bakers. All said the Callebaut was smoother and creamier, but most said the Bakers was more "chocolaty".

The Callebaut was easier to measure and use (I didn't have to chop it up for quicker melting). Maybe using a 50/50 mixture of each will produce the quality between smoothness and chocolate that I want.
