This book has beautiful pictures and lots of information about the chefs, but I can't believe these are normal things that they make at home unless they also have hobbies as large game hunters and culinary travelers to many countries for their home ingredients. I made my first recipe from this book tonight and it appears nobody actually made it from the text before publishing, or even read it pretending to. One ingredient from the list was completely missing from the text. Another ingredient was "plain flour" with no seasonings nearby, and in the instructions it says to "add the seasoned flour". Instructions for slicing a skinless chicken breast for stuffing were based on the skin side and the skinless side, and inevitably I got it wrong in one place - was the skinless side the side that formerly had skin, or the one that never did? The book seems to be a decent collection of recipe ideas, but the people who put it together presented it completely wrong and did not bother to edit it, except for the pictures. If you don't try to cook from it, it looks good.

I bought this book as a gift for my son-in-law who loves to cook, but I would be so embarassed to give it to him that I'm returning it. The recipes are ridiculous and I don't believe for a minute that these chefs actually cook these things at home. This is definitely not for anyone who wants just good decent recipes. Go buy something written by Jacques Pepin or Julia Childs instead. These chefs have submitted the most pretentious, silly recipes I've ever seen in a cookbook. Their egos must be huge as they seem to have tried to outdo each other by submitting recipes with ingredients not available to very many people. I'm sorry but my local Safeway doesn't carry "suckling veal cheeks" or "milk-fed poussin" or "litchi juice" or for that matter "Chinese grapefruit juice"! And why refer to chicken as "poularde"? Who are they trying to impress? Didn't work for me!

I too bought the book and feel the same way as others. I saw the interview on Charlie Rose when the book was being discussed. The Chefs presented it as a cookbook giving a view of "chefs after work like to relax and cook at home"! Cooking at home doesn't have to mean cooking with 5 ingredients in under 30 mins. for the "common man" but these recipes are ridiculous! I never would have bought it if I had seen it first! I guess we still do need bookstores!!!!!
