I love it as much as the day that I got it! I use Step 3 regularly to keep my knifes sharp. I even have some visitors come with their knives to have them sharpened!

I've been sharpening my kitchen knifes and my pocket knifes using a handheld sharpener for years.

Over the years, the edges became more and more damaged. Just like I one day evolved from cheap knifes to better knives, I figured that it was time to move up in the sharpening world as well!

I spent a few weeks debating the 320, the 110, the 120, or the 130. I watched all the videos on Chef's choice website to make up my mind and read the few articles available on the web.

In the end, I settled for the 130. I think that it's versality will last me through the years. I like tthat you can create difference edges using stages 2 and 3.

My kitchen knifes are Victorinox with fibrox handles (the lowest price "good" knives IMO). The oldest, the chef's knife is 8 years old.

Stage 1 took quite a bit of steel away from the older and more damaged knifes. However, now that the edge is made, I rarely use it so I don't expect to lose much more steel in the future.

The smaller knifes were a bit more ackwared to sharpen, especially the pocket knives. However, I adjusted how I hold the knife when I pass it through and it feels fine now.

In terms of drawbacks. Knifes like my Victorinox that have think handles make it difficult to work all the way through. As a result, some of the knives not have a butt where they didn't have one before.

Also ... be sure the read the instructions. Practice with the motor off to get the feel of it.

I have half a dozen go to kitchen knives that I was sharpening with a hand held sharpener and tuning with a steel. I thought they were pretty good until I watched someone slice an onion on a cooking show and realized that I couldn't do what they were doing with any of my knives. After sharpening each one I am astonished by how well they now perform. It's true that the sharper your knife, the safer the user. Slicing, dicing, paring... everything is a joy to do. I would put my knives against a professionaly sharpened blade any time. Highly recommend this.

We had the 120 for years, but this is a huge improvement. It is easy to operate, takes little time or room on the pantry shelf. It is nearly impossible to find a knife sharpening shop around here, but I would rather be able to do the job myself in any case. Even sharpened older knives that had been neglected for years. Every home chef should have one. Fast shipping, well packaged. Recommended.
