Book Description

July 1 2005
Coconut flour is a delicious low-carb, gluten-free alternative to wheat. It is high in fiber, low in digestible carbohydrate, and a good source of protein. Coconut flour can be used to make a variety of delicious baked goods, snacks, desserts, and main dishes. It is the only flour used in most of the recipes in this book. These recipes are so good that you won't be able to tell that they aren't made with wheat. If you like foods such as German chocolate cake, apple pie, blueberry muffins, chees crackes, and chicken pot pie, but don't want the wheat; you will love the recipes in this book! All recipes include low-sugar or no-sugar variations.

5.0 out of 5 stars life enhancer Oct 22 2011
By Denise TOP 500 REVIEWER
Format:Paperback
This little book has been me back a sphere of life I thought was lost forever! Being unable to eat gluten and starch means my diet is seriously altered and has deteriorated over several years. But I can now eat bread, sandwiches, cookies (i cook without sugar) cakes - you have no idea how 'normal' that makes me feel. Thank you!

5.0 out of 5 stars a very good book Feb 20 2011
Format:Paperback
This book has very clear instructions, and explains the problem with GF flours ( I dreaded the learning curve and I've previously thrown out lots of GF bread that I had made, then lots of GF flour---a terrible experience), as well as problems with coconut flour (I previously threw away a bag of it in disgust. Another terrible experience.)

We've just tried Bruce's coconut flour pancakes today. Delicious. Very encouraging. Thank you Dr. Bruce Fife for persevering. We are looking forward to trying other recipes from the book.

4.0 out of 5 stars fix for egg problem July 24 2012
Format:Paperback
i just read and thought to myself, if i was reading these reviews I might be discouraged from buying this potentially awesome book. judging just by the "too many eggs" issue, but being a holistic chef, i might suggest that you google substitutions for eggs. i know that flax seed with warm water gels like the consistancy of and egg, and there are others, just chec it out. i hope this gives some hope to those who might have passed on this book!

2.0 out of 5 stars to many eggs
The recipes sound like they will taste good but they sure do use a heck of a lot of eggs. I don't know that I will make any of them. A bit dissapointed in this book.
