The Portuguese have prospered in Joburg. Madeirans especially. Even fleeing from Mocambique they carried with them images of herds of meat on the hoof which their island ancestors could never have dreamed of.
So recipes for bacalao, an expensive commodity, abound. Perhaps with sardinhas bacalau is the most successful fish here 800km from the nearest ocean.
But she includes chicken dishes (notably Galinha a Mimi), soups and rice dishes for us with the slimmer wallet.
And she is genuinely African with her pumpkin and mealie (maize) bread. Genuinely an authentic slice of Portuguese Africana.
