About the Author

Joseph Forest is a formally trained professional chef with a passion for the health-giving benefits of plant-based diets. He has worked in fine dining restaurants and hotels such as the Four Seasons, and as a caterer for film crews. In addition to feeding rock stars, politicians and Hollywood celebrities, Joseph has run a whole food catering business and consulted to natural food manufacturers and restaurateurs. Vesanto Melina, M.Sc., R.D. is co-author of nine bestselling nutrition classics, including Becoming Vegetarian, Becoming Vegan, Becoming Raw, Raising Vegetarian Children, and The Food Allergy Survival Guide. Vesanto studied nutrition at the University of Toronto and the University of London, England. She taught nutrition at the University of British Columbia in Vancouver and at Seattle's Bastyr University. Of the many vegetarian recipes books I own, this is the one I return to the most. The recipes are delicious, turn out well consistently and have ingredients that I would normally have on hand. The nutritional information is listed with every recipe, which makes it easy to see at a glance, and the opening chapters are very informative about healthy eating. The recipes include enough spices to give them wonderful flavour without being too hot. A practical and inspiring book.

A very attractive book for vegetarian cooking. On the side of recipes it provides information about calories, minerals and vitamins per serving.
It's wonderful written from two people who are devoted to healthy food, which tastes interesting and delicious.

This book has lots of appealing easy recipes as I am just learning to cook Vegan. There are lots of hints and suggestions in back section to help with substitutions and what product names mean, like tofu and its various forms.
