Pros: canister doesn't need to be frozen, higher overrun, more consistent product, not as fussy for temp w/ mix and canister
Cons: unsatisfying noise, smallish canister for some
I have been using the ice-20 model and with my fridge, i find it time consuming and inconsistent freezing the canister. So, I really appreciate a machine that freezes on its own. I do put the canister into the fridge or freezer for a brief time beforehand (say 20 mins), just for an extra umph, but dont feel this is necesary. Compared to the ice-20, ice cream made in this machine comes out a tiny bit more firm, with more air, and takes a bit more time per cycle. consequently, a 3 cup cream mix is about the maximum volume it will handle. It results in greater overrun than super premium while still staying in a reasonable range. the accompanying sorbet paddle can be used to produce a more dense product so you also have more texture options. As to the noise, it is fairly loud but not as bad as a blender or coffee grinder. more significantly, its an unsatisfying noise. It doesn't hum but is deeper and more gratingly noticable, and you have to listen to it for 30+ mins at a time. all in all, I do prefer this machine over the ice-20 and am jazzed at making multiple batches over a few hours. I have no idea if spending more on a lello, etc will do you any favors.

Great machine....much more expensive than the more basic Cuisinart ICE-20/21, but with some important advantages. (1) you don't lose the freezer space to the bowl(s), (2) you can crank out batch after batch, although you still need to chill the mixture before you put it in for optimal results. At least this means that at least it's possible to decide to make ice cream and still be able to do that later in the same day. I tried two custard-type recipes and both resulted in an excellent product: after 45 minutes of mixing, the machine produced surprisingly thick, and wonderfully creamy and smooth ice cream. It needed a little time in the freezer to firm up enough to be scoop able, but not more than an hour or two and even in muggy summer heat the ice cream held its shape quite well. I found with the ICE-20 that the texture was often more crystalline and chunky, maybe because of the shorter churn time or the more physical heat transfer involved with the frozen bowl, maybe both. While not whisper quiet, this machine isn't excessively loud and the timer/keep cool settings are nice features. It's not terribly bulky for storage, either.

Excellent ice cream maker. For home use, it produces an appropriate (1-quart) quantity. It is easy to use and relatively easy to clean. Because it is self refrigerating, there is no need to freeze anything prior to making ice cream. Allows for spur-of-the-moment ice cream making. I've made a few batches of ice cream and gelato with no complaints with the process or result.

I can only find two downsides. The machine is a bit loud when operating. With the machine in the kitchen downstairs, I can still hear it faintly upstairs. You definitely can not have a decent conversation with someone when the machine is on in the same room.

Secondly, there is a small gap at the lip between where the bowl sits and the rest of the machine. If any ice cream/liquid ends up in that crack, it is a bit difficult to clean.

Overall, I feel this is an excellent ice cream maker especially for home use.

Great icecream maker, big step up from the ICE-30. This icecream maker doesn't make as much volume but the benefit is bring able to make 1 batch after the other. It was such a hassle having to freeze bowls, but with this one you don't have to, I feel like that makes it worth the extra cost, but I make icecream multiple times a week, sometimes multiple times a day.

We bought this because the less expensive ones did not work for us, (the bucket never got cold enough.) this unit takes 25 to 35 min for regular ice cream and an hour + for the ice creams with liquor added. if you use half and half you get an ice milk, (don't get me wrong it is still delish,) just icier. The full (whipping) cream/ custard style chocolate is amazing. it so rich a scoop seems like a lot. It does make some noise but it was not a problem for us.
