Michel Roux has held three Michelin stars for an astonishing 25 years at his renowned restaurant, The Waterside Inn at Bray. His career has been hugely successful ever since he opened his first restaurant, the acclaimed Le Gavroche in London, with his brother Albert. Michel has received countless other culinary honours, culminating in the OBE and Chevalier de la Legion d'Honneur. the roux brothers know their techniques. the recipes are perfected. they tend to be a little retrograde considering current dietary knowledge - rich butter, a lot of sugar and white flour recipes. then again, a small slice of gâteau has got to be buttery, fat and sweet. they are indulgences! and good ones, at that. les meilleurs recettes!

This is a beautiful book with great recipes and nice photographs. Chef Michel Roux is one of the best. All of his books are sought after and treasured.
