Would-be cooks who find themselves throwing a frozen package into the microwave way too often will appreciate
Dinner on Hand and its "easy everyday recipes you can make tonight." The chefs, dieticians, and home economists at Kraft Kitchens have pared down time-consuming classic recipes to more than 130 basic dishes that use pre-made sauces, dressings, toppings, and mixes to cut shopping and cooking time. With the many variations offered, the number of potential dishes swells to more than 200. Recipes call for some of Canada's most popular and familiar convenience foods, such as Philadelphia Cream Cheese Spread, Minute White Rice, Cheez Whiz cheese dip, Cool Whip Whipped Topping, Triscuit Crackers, and JELL-O Gelatin. Chicken Stir-Fry, for example, can be assembled quickly by using Kraft Sun-dried Tomato Dressing instead of making the usual soy and ginger sauce thickened with cornstarch. Easy colour-coded charts show cooks how to change the mix using beef, pork, and vegetables with different dressings. The many kid-friendly dishes include pizza, burgers, tacos, grilled cheese sandwiches, meatballs, and macaroni and cheese.
Some may find the instructions almost too simple. One version of the sizzling pasta bake, for example, calls for cooked Italian sausage yet doesn't suggest how to go about it. But the book comes with a toll-free telephone help line with expert advice at the other end. Even at a peak dinner hour on a weekday, Kraft provided a friendly and knowledgeable response in less than five minutes. Cooks who are undaunted by the challenge of coddling a hollandaise or grinding their own exotic spices into an authentic curry may not appreciate these simplified recipes, but families on the go who crave hot meals in less time will love them. --Carolyn Leitch
