This book is for cooks who don't have time to soak themselves, let alone a bean. The unique, new cookbook proves that beans, peas, or lentils can be today's answer to mainstream cooking. Glad i bought this! We are trying to cut down on meat consumption in our home so adding beans to the diet is a great way to add fiber and protein with little fat! So eat up! Great collection of recipes! Love it!!

My family became vegetarians 7 years ago and this book quickly became a fixture on my kitchen counter as I struggled to come up with interesting and tasty meals without meat. What a blessing to be able to try so many different recipes with ingredients that are easy to find and directions that are easy to follow. The second book, More Easy Beans, is just as wonderful and filled with just as many healthy and hearty recipes. I strongly reccomend both.
