A very nice little book, May 1 2011

This is a very decent book on pickling. The illustrations are plentiful and well executed, and the range of recipes is considerable. I enjoy flipping through it very much and only have a couple of criticisms: First, the layout of the book is very 'busy' and visually cluttered to the point that it is sometimes difficult to peruse. Secondly, some of the recipes included don't offer much information as to how the finished product might best be used in a meal. These, however, are minor criticisms, and, all in all, I am very glad I bought the book. I should add, however, that prospective purchasers ought to be aware of a couple of things:
- This book, as the title indicates, deals with 'quick' pickles (ie: types which can be produced in a day or less) so those looking for more traditional, long-term pickling recipes need to look elsewhere;
- The book is not for novices. The recipes are very brief and assume a certain familiarity with Tsukemono and basic cookery skills. There is virtually no introductory material on what constitutes Tsukemono, nor the role they play in a typical Japanese meal. In addition, the instructions are perfunctory to the point of being terse and will leave beginner's with a lot of confusion. Experienced cooks will enjoy this book as a source of inspiration but novice cooks may like to try something a little easier like
Tsukemono by Ikuko Hisamatsu.

I own about a dozen good Japanese recipes books and was looking for a recipe book on tsukemono.
A lot of Japanese dishes call for some condiments to accompany the main dishes. This book has a lot of easy to follow recipes that explain how to prepare and marinade fruits, vegetables, meats, fish, all of which are fully illustrated to show the finished product.
This is a wonderful addition to my other recipe books.

The recipes are easy to follow. Some of the recipes have photos picturing specific steps of the recipes and all have the finished product photo. This book will also recommend different recipes & their page numbers for the originally called for main vegetable, which gives you a large variety of tsukemono recipes. There are also some suggestions on using the finished products in main dish recipes.
