About the Author

Nigel Slater is the author of a collection of bestselling books and presenter of BBC 1's Simple Cooking and Dish of the Day. He has been food columnist for The Observer for twenty years. His books include the classics Appetite and The Kitchen Diaries, the critically acclaimed two-volume Tender, and most recently a second volume of The Kitchen Diaries. His award winning memoir Toast - the Story of a Boy's Hunger won six major awards and is now a BBC film starring Helena Bonham Carter and Freddie Highmore. The book does not inspire me. I was planning to pick a recipe to try over the holidays. But it seems that most of the ideas are not realistic for me, While each recipe uses few ingredients, there is at least one ingredient that I don't normally have in my kitchen. And that ingredient is usually something that the rest of my family won't eat.

Slater' s newest addition gives us practical, delicious offerings. The best thing is that every recipe is accompanied by suggestions that turn one meal into several decadent options. The layout, the print, the design are something to behold, suggesting great love, care, precision and thought went into this book. Do yourself a huge favour and get the print edition. Nigel Slater is a pleasure to read - surely one of the best and most intelligent writers on food today. That he himself cooks (and gardens) is all the more persuasive, and his direct and inspired recipes for simple, breathtakingly simple, meals is a model of restraint and rigor. The emphasis is on simplicity, quality and technique, with all the layered mystery that shrouds much cooking and baking removed. I'm convinced someone who has never cooked before, nor even thought of cooking, could follow one of Slater's meal recipes and produce something astonishing, satisfying and sufficiently rewarding to propel that person into becoming a regular and gifted cook. More than any food author I can think of, Slater has brought clarity and intelligence to food. His advice transforms food simply, but the results are sophisticated and satisfying at once. And yes, his recipes are environmentally and nutritionally responsible without being silly. He brings an Italian sensibility to English (and indirectly American) dishes that is forthright, refreshing and contemporary. He's produced a number of books: you should have each one!
