Lighter Eggplant Parmesan

WHY IT’S LIGHT This Italian restaurant standby turns virtuous with baked (instead of fried) eggplant and a healthier béchamel made from skim milk, which is then combined with some marinara sauce. Using less cheese also helps; here, the two cheeses are sprinkled only on top, rather than in each layer.
 
1 large Italian eggplant (2 pounds), sliced ½ inch thick crosswise
1 tablespoon olive oil
Coarse salt and ground pepper
1 cup skim milk
3 tablespoons all-purpose flour
2 garlic cloves, minced
1 cup homemade or store-bought marinara sauce
½ cup grated part-skim mozzarella cheese
1/3 cup grated Parmesan cheese
 
1. Preheat oven to 450°F, with racks in upper and lower thirds. Arrange eggplant in a single layer on two rimmed baking sheets. Brush eggplant on both sides with oil, and season with salt and pepper. Bake until golden brown and very tender, 20 to 25 minutes, turning slices and rotating sheets from top to bottom and front to back half-way through.

2. Meanwhile, in a medium saucepan, whisk together ¼ cup milk, the flour, and garlic. Gradually whisk in remaining ¾ cup milk and ½ cup marinara sauce. Bring to a boil; reduce to a simmer, and cook until sauce has thickened, 2 to 3 minutes.

3. Spread ¼ cup marinara sauce in the bottom of a shallow 2-quart baking dish. Alternate layers of baked eggplant with milk sauce. Dollop with remaining ¼ cup marinara sauce. Top evenly with mozzarella and Parmesan. Bake on upper rack until cheese is browned and sauce is bubbling, 10 to 15 minutes. Serve immediately.

I received this book as I gift and I think it's great! I've tried a lot of low cal recipes and let's be honest, they aren't always delicious. 90% off the recipes I've tried from this book are fantastic! I recommend it to friends and I even picked one up for my mom! Definitely worth purchasing!

This is a book you grab, flip through for inspiration and generally find that you already have what you need so you get cooking, then and there, with consistently great results. I've had this book for over a year now (in fact I have all three of the Everyday Food books--all great), and it has become my go-to book for 'what are we having for dinner tonight?'. All the recipies are straightforward and so far almost all have been delicious, the food appeals to children and adults alike (few weird ingredients though I'd like more ethnic cooking), and the illustrations and simple directions mean that anyone can do it, right now. I have lots of cookbooks that I enjoy reading, but they just don't get me into the kitchen (too many steps or special ingredients or low confidence that it will appeal to the whole family).

Finally a note on the "light" title--while I don't generally like "low fat" cook books (I'm just not willing to trade off flavor), with this collection you'd never know. Highly recommended.

I have never cooked so many recipes out of a cooking book in so little time. Since purchasing this book about a month ago, we have almost completed the "Winter" section of the book and can't wait for Spring to arrive! That's right; the book is divided into seasons! What a great concept.

I love that you are always certain that the meal you are cooking is light and healthy. The recipes are very simple and usually require ingredients that you would either use regularly or can obtain easily!

BEST RECIPE BOOK PURCHASE!!!
