Impressive, easy recipes for entertaining or Wednesday night,

My mom gave me this cookbook for Christmas and I love it!!! The recipes are all simple to make, with ingredients I can even find in my little New Mexico town. At the same time they are impressive in taste and appearance making them great for entertaining. There is a recipe for grilled shrimp that makes my mouth water just thinking of it. There is a lamb shanks recipe that is wonderful and you HAVE to try the prosciutto wrapped pork loin recipe. The salsa verde might just make you cry, it's so good. I also like that most of the recipes can be prepared mostly in advance and either cooked quickly or go in the oven, leaving me available to actually talk to my guests. Buy this cookbook!

I've used this book regularly for over a year. Everything has turned out. I am a cookbook junkie, but this is one of the books I use, not just 'read'. I particularly love the roasted vegetables with chicken, lemon and artichoke hearts....Have gotten great compliments.
