Embracing an Old World food in the New World kitchen.

Flax is rich in alpha-linolenic acid, dietary fiber, protein and phytochemicals, which all help maintain good health. Everything Flax is the result of a decade of research into flax's uses in traditional foods and the ways in which flax can be incorporated into the average diet.

Learning to cook with flax is simple with Linda Braun's enticing collection of recipes. Each easy-to-follow recipe features whole flaxseed, ground flaxseed or flax oil and is accompanied by a complete nutritional analysis. Braun also includes ideas and tips on how to take advantage of the incredible health benefits of flax in hearty and healthy dishes such as:

  • Flax-coated goat cheese and apple salad
  • California sushi rolls

  • Pan-roasted pork tenderloin with flax crust
  • Chicken and bourbon
  • Red snapper and bean salad with Cuban mojito sauce

5.0 out of 5 stars Just like the title says April 30 2009

I checked this book out from my local library, started baking some of the recipes, re-checked the book out and then decided that this is a cookbook I want to buy. I'm a bit stingy when it comes to buying new cookbooks, but this is one I highly recommend for purchase if you have any interest in incorporating flax into your cooking and baking.

The recipes listed in the summary here on amazon don't begin to cover the scope of what I like best in the book. The book includes many, many recipes that are what I'd call everyday "please the whole family" foods. There are several cookie and muffin recipes that are absolutely delicious.

I started incorporating more flax (usually ground, but sometimes whole because we like the crunch) into recipes a couple years ago. This book will be a really good standard guide to expanding my efforts.
3.0 out of 5 stars Carb Overload... Sep 21 2011
    By L. Plasse - Published on Amazon.com
I also checked out this book from my public library like the smart reader above.
The first section naturally expounds on the virtues of flax. Great color pictures are provided of the finished products.
The problem I have however, are the amount of carbohydrates per serving, many are in the 50's grams.
The intended purpose of eating healthy goes right out the window with the carb overload. Flour, sugar and an assortment of fruit is called for in many of the recipes. For many people this kind of eating leads to weight gain and an imbalance in their blood glucose.
A better choice would be to replace the flour with almond flour, the sugar with stevia and the fruits with berries in moderation in order to bring down the carbohydrates to a sensible amount, perhaps between 10 to 20 grams per serving which is still on the high side.
