Lee Fulkerson's illuminating documentary serves as a natural successor to Food, Inc. in taking a critical look at the consequences of Western dietary habits. While some might view the lower-budget Forks over Knives as a long-form commercial for veganism, Fulkerson's evidence supporting the benefits of a plant-based diet is too compelling to dismiss (and he never claims that a small piece of cheese ever killed anyone). The filmmaker builds his case around the work of two doctors who grew up on farms where cow's milk was considered "nature's perfect food," as Dr. T. Colin Campbell puts it, and went into different fields of medicine, but their research led them to the same conclusion. For 20 years, Cornell University nutritional biochemist Campbell focused on China, where degenerative disease rates skyrocketed with the increased consumption of meat and dairy. By contrast, Japan and Kenya, where the fare is leaner, have experienced far fewer incidences of such illnesses. As a surgeon, Cleveland Clinic's Dr. Caldwell Esselstyn, an Olympic Gold Medalist for rowing, also witnessed the results of a dependence on animal-based and processed foods: heart disease, type 2 diabetes, and some forms of cancer. When his patients eliminated these items, they experienced significant improvement. Several appear on screen, along with Dr. Neal Barnard, Junshi Chen (collaborator on Campbell's China Study)--even mixed martial artist Mac Danzig. What has happened to us? Despite the most advanced medical technology in the world, we are sicker than ever by nearly every measure.

Two out of every three of us are overweight. Cases of diabetes are exploding, especially amongst our younger population. About half of us are taking at least one prescription drug. Major medical operations have become routine, helping to drive health care costs to astronomical levels. Heart disease, cancer and stroke are the country's three leading causes of death, even though billions are spent each year to "battle" these very conditions. Millions suffer from a host of other degenerative diseases.

Could it be there's a single solution to all of these problems? A solution so comprehensive but so utterly straightforward, that it's mind-boggling that more of us haven't taken it seriously?

FORKS OVER KNIVES examines the profound claim that most, if not all, of the so-called "diseases of affluence" that afflict us can be controlled, or even reversed, by rejecting our present menu of animal-based and processed foods. The major storyline in the film traces the personal journeys of a pair of pioneering yet under-appreciated researchers, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn.

Dr. Campbell, a nutritional scientist at Cornell University, was concerned in the late 1960's with producing "high quality" animal protein to bring to the poor and malnourished areas of the third world. While in the Philippines, he made a life-changing discovery: the country's wealthier children, who were consuming relatively high amounts of animal-based foods, were much more likely to get liver cancer. Dr. Esselstyn, a top surgeon and head of the Breast Cancer Task Force at the world-renowned Cleveland Clinic, found that many of the diseases he routinely reated were virtually unknown in parts of the world where animal-based foods were rarely consumed.

These discoveries inspired Campbell and Esselstyn, who didn't know each other yet, to conduct several groundbreaking studies. One of them took place in China and is still among the most comprehensive health-related investigations ever undertaken. Their research led them to a startling conclusion: degenerative diseases like heart disease, type 2 diabetes, and even several forms of cancer, could almost always be prevented - and in many cases reversed - by adopting a whole foods, plant-based diet. Despite the profound implications of their findings, their work has remained relatively unknown to the public. The filmmakers travel with Drs. Campbell and Esselstyn on their separate but similar paths, from their childhood farms where they both produced "nature's perfect food"; to China and Cleveland, where they explored ideas that challenged the established thinking and shook their own core beliefs.

The idea of food as medicine is put to the test. Throughout the film, cameras follow "reality patients" who have chronic conditions from heart disease to diabetes. Doctors teach these patients how to adopt a whole foods plant-based diet as the primary approach to treat their ailments - while the challenges and triumphs of their journeys are revealed.

FORKS OVER KNIVES utilizes state of the art 3-D graphics and rare archival footage. The film features leading experts on health, examines the question "why we don't know", and tackles the issue of diet and disease in a way that will have people talking for years.

Astonishing information is presented in an interesting and entertaining way. This movie brings together scattered pieces of priceless knowledge to form a complete picture of the state of Nutrition as it exists in industrialized nations such as the USA, Canada, the European Union and several others. Serious debilitating diseases affect a large percentage of these populations not just in old age but now in middle age and sometimes younger. Diseases such as Diabetes, Cardio Vascular Disease, Cancer, Arthritis and obesity to name a few. What is startling are the common causes among these diseases.

The work of top flight researchers and medical practitioners is presented in everyday language leading to an understanding of the cause and possible cure of many serious diseases. Several patients are followed through the process of consuming adequate nutrition resulting in remarkably rapid improvement of their conditions. This movie outlines a way to avoid pain and suffering by methods that the average enlightened individual can perform with ease and perhaps enjoyment. Most patients studied were able to reduce or discontinue expensive medications relieving them of the expense and side effects, not to mention the avoidance of life threatening surgery.

The book of the same name is currently on the New York Times best sellers list and has been there for more than 30 consecutive weeks. I only wish I had seen this movie twenty years ago, it would have allowed me to make changes in my lifestyle perhaps avoiding the appearance of serious disease.

I have had Celiac Disease and have been on a gluten free diet since my 20s so no cake, cookies, bread, crackers, sandwiches or fast food restaurants for me. In replacing all the goodies I missed out on, I was a heavy consumer of meat and dairy products, potatoes, fruit, vegetables and candy. I am now 52 and my weight was stable at 130 lbs. until I hit 45 years of age.

I have extremely high cholesterol, and fatiqued most of the time at 5'6 and 162 lbs., without the consumption of junk food. My dad had a quadruple bypass at age 80 and began researching the link between nutrition and disease. He found this video and urged all 6 of his children to consider watching it. I ordered this, the book and the China Study and embarked on this diet March 1st.

Aside from weighing in 10 lbs. less, 20 days later without exercise or hunger pains,the benefits I have noticed are many. I have tons of energy, and a general sense of well-being with no more cravings for sweets (candy was my weakness). I now am motivated to go for walks and begin to exercise more than I have been. I decided to give it 3 months of faithfully sticking to it then get my cholesterol checked again. I managed to get my doctor to agree to let me try to address my cholesterol before putting me on Lipitrol. There is no counting calories and the reason for my choice is based on it is not a diet but a way of eating that is healthy and prevents as well as reverse disease.

If you are sick of sitting on the couch watching other people live, this will at the least give you motivation to try something different to what you have been doing. At this price, these doctors are not getting rich on this video or the book but sharing what they have found to be true and back the China Study which is the largest study ever done on the link between nutrition and disease involving 200 plus counties in China. The rich were dieing of western diseases based on their consumption of our foods while the poor could not afford them and were thriving.

I am very grateful to my dad for caring enough about his children to research this topic so thoroughly on our behalf. Thanks dad!

Absolutely amazing. The staggering amount of scientific information. The array of case studies. The movie covers decades of research over many countries. I've never seen a documentary where I have been shocked so often or so strongly. Definitely a must see film for everyone and certainly for anyone you care about.
