Ce livre une des bibles de la cuisine française, le livre que tout bon chef ou en voie de l'être devrait avoir.
La base de la base, les règles assises de la gastronomie. Le vocabulaire s'installe en nous après quelques temps.
Beaucoup de plaisirs à le lire (quel français impeccable).Dégustant les oeuvres culinaires; je me pensais au restaurant.Plus de 5000 recettes,confitures,garnitures,entrées,fonds, sauces,etc.
