This is a great book for the beginner. It not only provides recipes but also takes you through the total understanding of the sausage making process. This process includes meat selection, different types of casing and the advantages of each. It's content also includes meat handling, food safety, different types of equipment, and if you get serious, how to set up a sausage kitchen. I believe that this book would be mostly advantages to the novice or beginner sausage makers. Good luck and keep stuffing!

Good book. Lots of information on a wide range of sausage. The only down side is that I would have liked more fresh sausage recipe. It's more a technique book with 3-4 recipe per sausage type than a recipe book.

If there is one must have book on the market for meat curing and sausage making this is probably it. It has a vast array of information, recipes and techniques that take the guess work out of this complex form of food preparation. His recipe for smoking bacon is to die for (if it don't kill you)so simple yet so good. I have several other books on the subject but this one is always the acid test for other recipes. The only caution is to watch the insta-cure volumes suggested as he tends to go on the high side which are beyond the recommended amounts listed on the insta-cure label.

This book is tremendous! It's got pretty much everything you need to make sausage and other cured meats. It draws from the deep well of Kutas' years of experience in the field. 4 stars instead of 5 because he doesn't give a step by step process on what the beginner needs to do from start to finish to make sausage. Other than that wee critique, this book is sensational and highly recommended.
