This is a great book for the beginner. It not only provides recipes but also takes you through the total understanding of the sausage making process. This process includes meat selection, different types of casing and the advantages of each. It's content also includes meat handling, food safety, different types of equipment, and if you get serious, how to set up a sausage kitchen. I believe that this book would be mostly advantages to the novice or beginner sausage makers. Good luck and keep stuffing!

This book is tremendous! It's got pretty much everything you need to make sausage and other cured meats. It draws from the deep well of Kutas' years of experience in the field. 4 stars instead of 5 because he doesn't give a step by step process on what the beginner needs to do from start to finish to make sausage. Other than that wee critique, this book is sensational and highly recommended.
