The breads resulting from the recipes in this book are exactly as promised. Yes, you must plan ahead, and start the dough well in advance of the time you will need a finished loaf.
However, there is lots of flexibility in the timing with each step, so if you aren't able to proceed when the minimum time arrives, you can defer as needed within the constraints suggested.
The 'pot' as oven within the oven has been great fun, and results in a characterfully crusty, big-holed, chewy loaf.
In addition to about six recipes for wheat loaves/sweet breads - all remarkably successful, I've also made a wheat-free recipe three times for a non-wheat eater...also very successful.
For anyone looking for a simple approach to bread-making, and is willing to forego the hands-on involvement of traditional methods, and is able to prepare ahead, this book is the perfect guide.

I love this book - so simple to make the bread. I've made the plain white, the light brown and am now making the "pain ordinaire". I can't wait to make the others. I find Nancy's instructions so well thought out and written that they are easy to follow, and the photos are also incredible. All of my breads have turned out wonderful and have had rave reviews from friends. I would recommend this book to anyone who loves to bake.

I gave a copy to a friend who loves making his own bread. The explaination about yeast being alive and needing food and a room temperature invironment to grow in, threw his old-school theories about yeast out the window. his wife does enjoy the 'kneadless' part of the recipes and getting to the baking faster, thus being able to spend more time raising their daughter.
