Book Description

Chef Alain Rayé divulges his secrets to delicious French cooking.

In West Vancouver, people flock to the comforting French country fare served at Chef Alain Rayé's award-winning bistro, La Régalade. Now the delicious tastes and aromas of this successful little bistro can be recreated thanks to the restaurant's companion cookbook.

Accompanied by luscious photography and humorous illustrations, the recipes are easy to follow and rich in flavor. Rayé also suggests wines to maximize the dining experience, and the book is organized by season to take full advantage of the fresh resources each season offers, such as:

    In the Spring:
    • Pork Shanks with Ginger and Kumquats
    In the Summer:
    • Chicken with Lemon Confit
    In the Autumn:
    • Duck Ragout with Wild Mushrooms and Chestnuts
    In the Winter:
    • Lentil Crème Soup with Grilled Bacon.

Introduction

Cooking is the happiness of my life. This is my art, my way of communicating, and my true passion. As any artist knows, the joy of creating is surpassed only by the joy of sharing your creations. Sharing my cuisine with people who appreciate food is my ultimate satisfaction.

La Régalade -- meaning "a succulent treat" -- was the perfect venue to share simple but traditional comforting bistro fare. Bistro cuisine is the closest you can come to a real, down-to-earth French culinary experience. Fresh regional ingredients, cooked slowly with love and attention, shared humbly between family and friends are what we're all about.

With this cookbook, you can be the great French chef in your family, recreating the same authentic and delicious bistro dishes that you find on our blackboards every day, and sharing great French food, joviality, and hospitality in your own home.

Don't forget to kiss your guests on each cheek when they arrive! A tradition is a tradition. Bonne chance et bon appétit!

Alain Rayé

5.0 out of 5 stars excellent little book! Feb. 10 2010
By Toad
Format:Paperback
I recently ate at La Régalade in West Vancouver, and was so impressed that I wanted to see if I could find any of their recipes online - I didn't know there was a cookbook available! The cookbook gives clear instructions on how to prepare a number of delicious French bistro meals, according to season. Some of the recipes will take some time to make, but they are not difficult, and ingredients are easily available. A perfect addition to the cookbook collection of any foodie :)
