Hate eating cardboard? Tired of salad with grilled chicken? This cookbook's for you!
Classic catch-22, I want to eat healthy, but I have a deep aversion to the words "light," "fat free" or "low carb". America's Test Kitchen to the rescue! They made certain that these recipes actually taste good. Seriously. Guiltless pleasure.
However, use the ingredients they tell you to use. They used every trick in their repertoire (and invented quite a few new ones) to use the least amount of fat and still deliver full flavor. If they use something full fat, it's because the lower fat versions didn't work. Repress the impulse to switch it out!!! Take a deep breath, look at the fat/calorie breakdown (good, right?), and prepare to enjoy something delicious.
Full disclosure: I'm not the best cook... I've been known to burn the onions and overcook the greens. However, these recipes are practically foolproof. If I do manage to goof up, I usually know just what i did wrong (it's still pretty good...), and I get it right the next time.

The book is entertaining to read as they tell about the process they went through to make each recipe possible and I really appreciate the nutritional information. The recipes are wonderful and the recipe stories are a wonderful inspiration for more recipes.
