If you want an introduction to literary theory that shows you how to DO it as well as just how other people do it, this is the one. Every single essay in the book is about the same short story, so there is not too much outside reading. And the story is even printed in the same book! (it's OK - just a little romance kind of thing.) I liked the one on feminism best, but they all explain things really well - made me feel better about theory.
