I was so fortunate to be given this incredible book by my Daughter for Christmas 2008. She was also so kind and patient in the translation! (She is fluent in French and it took her four hours to translate the technique, the very beginning of the book.) Our quest to make these delicious cookies began after happening upon Laduree in Paris. First bite we were hooked. (Vanilla and Ispaham are our favorites.) The techniques are very detailed and will produce excellent results providing you use only the best ingredients and follow all of the instructions. Be warned! Mr. Herme recommends you let the egg whites rest for a week PRIOR to starting the recipe. I have never had to plan a week ahead to make anything, EXCEPT Macarons. Also, be sure to follow the recommendations when baking the cookies. They take about 2-4 hours to complete as long as you have no mistakes along the way, but well worth the time. I love this book!
