I used to love milk. In high school, I drank half a gallon a day. And this laid the foundation for a health crisis. In my 30's, I developed severe lactose intolerance. While attending a 12-week holistic health class, taught by someone with the anti-establishment credentials of Dr. Douglas, I discovered why. Modern processing kills all the natural enzymes found in milk that allow the body to process milk. This forces your body to deplete its own store of enzynes. This eventually results in lactose intolerance. When I drank RAW milk, which still contains these enzymes, I was fine. I searched for this book for years without luck.
