Very Berry Crumble
 
I like to use frozen berries for this crumble. Not only can I have it any time of year, but the juices left in the bag after thawing provide sweetness (without adding a lot of sugar) and sauce for the crumble.
 
4 Servings

Crumble Topping
3⁄4 cup sliced almonds, lightly crushed
1⁄3 cup quick-cooking oats
2 teaspoons sugar
Hefty pinch of ground cinnamon
Pinch of freshly grated nutmeg
2 tablespoons butter, softened, plus more for greasing ramekins

Filling
1 10-ounce bag frozen raspberries, thawed
1 10-ounce bag frozen blueberries, thawed
1 tablespoon sugar
1 tablespoon cornstarch
 
Preheat the oven to 375°F.
 
Grease four 6-ounce ramekins and transfer them to a foil-lined baking sheet and set aside.
 
To make the topping, in a bowl combine the almonds, oats, sugar, and spices. Add the butter, and, with your fingers or a fork, rub the butter into the dry ingredients until large, coarse crumbs form. Set aside while you make the filling.
 
To make the filling, put the berries into a strainer set over a bowl to catch the juices. Add the sugar and cornstarch to the juices and whisk until smooth and the starch dissolves. Gently fold the berries back into their juices, and divide the mixture among the greased ramekins. Top each filled dish with one fourth of the crumble topping and place on the baking sheet. Bake until bubbling hot and the topping is golden, about 20 minutes. Allow the crumbles to cool for at least 10 minutes before serving.

I have many book of Rachael's and this one was very very disappointing and I would like to return it. I have never had to return anything from amazon before so can u help me and am I able to return product that are not up to your products. It was hard to follow and didn't have any new or interesting recipes that I would ever want to try. Some seem more detailed then I am use to getting from her books. I saw maybe 1 or 2 that I might try but not worth the price of the book. Please can I return it Thanks Susan. Love your company and Rachael book are usually alot better, I own 6 of them

This book is a winner. I usually detest this woman's public image but her love of pitbulls and these amazing recipes may have softened me a little bit. 99% of these recipes have my family longing to try them and, of the three we've made,all have been winners. This book is easy to read and understand. The recipes are family friendly,not many "weird" ingredients and she's not nearly as annoying in print as on air. I borrowed this book from the library and had to buy my own copy. There are just waay too many excellent recipes!

This book is not anything new or glaringly different from Rachael Ray's other cookbooks. So, if you already have 1 or 2 of her cookbooks and are looking for new types of recipes you might want to skip this.
However if you are a fan, this book is a good purchase - it has a different concept; at the beginning a list is given of family faves, best dishes to show off, and super easy. The sections consist of entertaining, stretch a buck, burgers, vegetarian, pasta, seafood, one-pot, chicken, meat and date night. The index is divided by dish names and ingredients.
If you don't have any of her cookbooks this would add to your collection.
The book is a paperback and does have to be bent/coached into laying open on your kitchen counter, but so far it has held together and seems solid. There is one recipe per page - easy to read and a few picture sections.
You will not find fancy French cooking here or complicated recipes, this book is pure Rachael Ray. She has such a huge fan base because of her personality and style and the relative ease of her recipes. If that's what you are looking for, this is for you, or the gift you are looking to give.

This book has a lot of creative interesting recipes. Strongly advise reading through it and selecting recipes for a shopping list as you may not have some of the ingredients in your "every-day" pantry. Instructions are simple and easy to follow.
