Shun Classic's amazingly sharp blade is famous for both edge retention and ease of sharpening. Each blade has a core of VG-10 "Super Steel" with a Pattern Damascus cladding of 32 layers of high-carbon stainless steel--16 layers on either side. While the wood grain pattern enhances the knife's beauty, it also adds durability and stain resistance, and reduces friction when cutting.

Detailed Features

  • Blade core consists of high-carbon VG-10, a Japanese super steel known for its edge retention, allowing the knives to hold their sharp edges for years.
  • Blades boast a 16-degree angle, making these the sharpest knives out of the box. This is sharper than traditional European blades, which are usually sharpened to 20-22 degrees.
  • Clad with 16 layers of SUS410/SUS431 Pattern Damascus stainless steel on each side for strength and flexibility. This metal is corrosion-resistant and easy to maintain.
  • Damascus styling adds to the beauty of the knife while the microscopic air pockets created by the cladding process reduces friction during slicing.
  • D-shaped handle fits in the palm and provides comfort and control, keeping the knife's handle secure in the hand during use.
  • Available standard in D-shaped handle styles or by special order in reverse D-shaped handle styles.
  • Pakkawood handles, made of resin-impregnated hardwood, are NSF Certified for use in commercial kitchens.

The knife is super sharp out of the box. My friend cut himself after barely putting his thumb on it.
The knife feels great in the hand. The handle feels super solid.
Did some tests with paper and it can slice through it easily.
Did some tests with fruits and seem to perform well.
Due to the un-conventional shape of the knife, it doesn't fit in my block very well.
I don't expect the knife to do everything except cutting veggies.
Hopefully, the 8" classic will go one sale soon so that I can get it and do a comparison between the two.
The knife is definitely worth 40$ though... probably not $100+

I picked up this Shun Classic U2 Ultimate Utility Knife on sale for ~40cdn.
It's a beautiful knife. Literally. Striking. And extremely sharp. Very good for cutting tomatoes, other veggies, and even bread.
However, it's not as versatile or as ergonomic as a chef's knife or a santoku. This is because of its shallow blade, straight angle, and serrated edge.

If you're just starting out with building your knife collection and on limited budget, skip this for now and invest in a chef's knife or Santoku, or even a small paring knife. If you're rounding out your collection, this is a great addition.

The product is good and arrived within 2 days of placing my order. Blade was impressively sharp straight out of the box. As a professional cook I can't say this will be among my most used knives but it's a great addition to any knife set. Just make sure you don't pay too much. It was on sale for around 70$ when I bought it and I think it's worth about that much. I wouldn't pay more than 100$ though (the regular price is listed at 187?!). I like Shun knives and this one is no exception.

I just received this Shun Classic U2 Ultimate Utility knife in the mail from Amazon.ca and my initial opinion is that it is a very cool little knife. This is my second Shun knife and both are very well made. This U2 is not as robust as the other but it is from a different line (Premier). The U2 is not a one dimensional knife. You can use it to cut just about anything you need to cut. I have slice rustic bread, tomatoes, hard salami, and some hard cheese with it with no problem at all. I would add that this general utility is a strength and a weakness. You can use it for lots of jobs but there are other knives that might do particular jobs much better. I might not grab it first for slicing and dicing for example. I guess my thought might be that adding this knife to a set is fun but I might not want it as my main knife. For the price I paid I feel I received a well made, extremely sharp knife that will last a lifetime.

Excellent build quality Japanese knife. I mostly use it for paring roasted duck or turkey. Way much better than the Miyabi utility knife (which is also really good) I used to use. It is a perfect size knife for me to handle the birds.

I love Shun knives, and bought this one, it is well balanced, and easy to use a great overall knife. My only thing with this knife and a lot of others on the market is that I have limited use for it. I may use this one 3 times a year, while I use my chefs knife daily if you do the math it does not add up.

I first thought the idea of a "sandwich" knife was a bit strange, not anymore though. This knife is sharp, the perfect shape for spreading and scooping, and looks incredible. The way the edge is shaped allows it to cut through tough breads, and delicate veggies like tomatoes with ease.

Great all around knife, I use it for almost anything. After two years, half the teeth are lightly chipped. It's still extremely sharp, which is a good thing as I don't know how I would sharpen it. It's expensive but it's worth it.
