After getting 2/3 of the way through the expensive, lenthy cassoulet recipe, I noticed that the authors left out a step. Earlier in the recipe, one is supposed to brown lamb stew meat and pork shoulder cubes and "reserve." Well, the recipe never states when one is supposed to add the reserved lamb/pork into the beans. For such an acclaimed cookbook, this is a startling mistake. I've cooked a few other recpes that were good or okay. Perhaps so few people have the courage to attack this recipe that no one comments.
