I LOVE this cookbook! I am full time student, married to a super-busy business husband and we have little time to prepare dinner on nights where my school runs late and his emails keep coming. Before the book, we relied on junk food for dinner on these particular days, which was more often than not. Now our slow cooker does the cooking during the day, and best of all, its health conscious and low calorie! My husband loves chili, but our recipes were pretty loaded: high cal and high fat. The Spicy Chili with Fire-Roasted Tomatoes recipe can be thrown together in the morning, cook all day, and my husband and I come home to a hot, delicious meal that is only 112 cal per 1/2 cup. AWESOME.
I was surprised to find that the book isn't just about low calorie and healthy meals, but also has sections for beverages and desserts and sweets, like peppermint hot chocolate, banana and pumpkin bread and even -get this- baked apples for the slow cooker. Basically, this book has you covered on meals, desserts, pastas, sweets, everything that you can prepare early and come home to after work, school or errands. Not to mention, it is FULL of the yummiest pictures that really get you hungry; you will be just waiting for that slow-cooked dinner all day just like we do.
This cookbook is a keeper in our house!
