I picked up this book on the recommendation of a friend. I have been trying to cut back on carbs but having a hard time finding good recipes. This book definitely fits the bill! It has excellent, down home, southern recipes like Maple Bourbon Ham and Hashbrowns with Cheese and Corn Bread -- all with substitutions to lower the carbs without sacrificing the taste!

I have to say that dessert is my downfall and I was very happy to find a Strawberry Shortcake recipe. Magnificent! This is a delightful cookbook and I am very happy to have found it!

I fell in love with the very first recipe in this cookbook - the one for Cheeseburger Casserole. It sounded delicious so I made it. And it was delicious. We loved it! I was surprised by all the different types of recipes in this book, from meals to desserts. Many of the dessert recipes use Splenda, which I find works well in baking. It isn't quite as good as sugar, but it certainly is a lot better for you, so I do try to use it in some of my baking.

The Guilt Free Cheesecake is awesome. With a blueberry or strawberry sauce it really is a lovely dessert. I highly recommend it.

If you're looking for recipes that are low in carbs, look no further, this book will get you started on the path to low carb eating.

This is a delightful cookbook. I don't often laugh my way through a cookbook! Being a borderline diabetic and religious about a low carb diet - this book rocks! Great recipes! Very innovative author!

This book was a nice idea, but the author seems to have slopped it together. Ingredient amounts are not listed at times, other things forgotten. There really wasn't anything special about this book, and I was very disappointed. Perhaps with a little more effort and editing, plus adding some more interesting (and COMPLETE) recipes, it could be a better book. I dislike being critical, but this was just not done well at all.

I was so excited about this book and still anticipate trying some of the recipes, but right now I'm pretty disappointed.

I was all ready to make chicken and dumplings: have the chicken and homemade stock, bought the coconut flour, chopped the veggies and started reading the recipe - OOPS! It doesn't make any sense. If I put the flour in with the broth at the beginning, how do I add the baking powder and flour together? When do I add the chicken and veggies? Did my book just download wrong? If there is a solution please fill me in. I went to the website in the book but it no longer has an owner. I guess it's time to go into search mode.

I intend to try more of the recipes here but I will read them thoroughly before I go shopping for ingredients that aren't already in my cupboard. Good luck and read ahead.
