There are not enough words to adequately describe this book. This is probably one of my favourite culinary books of all time, close to LaRousse Gastronimique. It is so compelling that it is nearly impossible to put down. Blumenthal's writing is witty, intensely interesting and absolutely packed with information. It is intriguing to get more than just a glimpse into the mind of a brilliant scientist and genius. Even if the book did not include recipes it would be a great read. I need to know the how and why things work the way they do and this book describes things in incredible detail, satisfying my curiosity. His creativity in the use of ingredients is remarkably displayed. Blumenthal encourages the reader to experiment and see things in different ways.The photos and visuals are incredible; ingenious, in fact. Almost worth buying the book for that alone! The recipes are unbelievably well researched and skillfully written. Though many of us will never make "Nitro-Poached Green Tea and Lime Mousse" or "Crab Biscuit (Roast Foie Gras, Crystallised Seaweed, Rhubarb and Oyster Vinaigrette)" at home as they require ingredients not easily attainable and/or the equipment necessary, we can take ideas from the recipes and experiment and learn more. These recipes (and the information they contain) can still challenge you to become a more skilled, creative and knowledgeable cook. They can really take you to a higher level. The Science section at the back describes the equipment, ingredients and techniques at the Fat Duck Restaurant. It includes meat cookery, sous vide, ice cream science, deionisation, pH meters, vacuum chambers, gellan, gum arabic, etc. There are also sections on the role of the brain, the sense of taste, emulsions and emulsifiers in the kitchen and so on. This book is pure pleasure. If you are ready to be inspired buy this book immediately!! Some books are not worth all the hype but this one goes above and beyond what you can imagine. "A Day at El Bulli" is good; "Alinea" is excellent; "The Fat Duck Cookbook" is superb and defies description.

I gave this book as a xmas present and the recipient (a Chef) went wild over it.This book is for the chef who is looking for something completely different and not anywhere's close to the mainstream.

J'ai décidé d'acheter ce livre pour offrir en cadeau à mon conjoint. Hey oui, il aime cuisiner!! Heston Blumenthal est un de ces préféfé et "The Fat Duck" est le nom de son restaurant à 45 minutes de Londres. J'ai décidé d'acheter ce livre sur Amazon puisqu'ils sont mon magasin WEB favori... En magasin près de chez-moi, Chapters vend le même livre à 22,50$ PLUS CHER!! Je pourrais m'acheter un autre livre avec cette différence!! En plus, j'ai eu mon livre en deux jours!! WOW et re-WOW!!!Un conseil chers internautes, venez voir ici avant de magasiner ailleurs, ça vaut le détour!!
