About the Author

Tammy Credicott is a part-time blogger, full time entrepreneur, the wife of a Celiac (affectionately called The Maniac), and mom to two girls with gluten, dairy, and egg intolerances.

And while some of her favorite things include summer vacation, months ending in 'ber', and photography, she finds her passion and enthusiasm for life in her kitchen with her family.
Tammy lives in Bend, Oregon, where she created the successful gluten-free, dairy-free, egg-free wholesale bakery, The Celiac Maniac. A self-taught home cook extraordinaire and Food Network junkie, she has transformed her family's health with the creation of simple, healthy allergy friendly recipes that fit their busy lifestyle. I purchased this book after learning I had a sensitivity to wheat, dairy and yeast. Although I am not sensitive or allergic to gluten itself, going gluten free is actually almost easier than just avoiding wheat. I ended up spending a lot of money on pre made gluten free food and was mostly always disappointed. Everything was made with white rice flour and was always so chewy and tasteless. I felt trapped and hated this "sentence" that was handed to me. Wheat and dairy were a big part of my life and I missed it so much! Then I found this book and it opened up my eyes to what I had been limiting myself to. Instead of concentrating on what I couldn't have, I started concentrating on the things I COULD have. That's what I love about this book: it has recipes in it that are not just a gluten free variation but just naturally gluten free. With this book I learned about the different types of gluten free ingredients I could use for baking and cooking. One of the things that I love is that the recipes include weight measurements which makes it so much easier when putting together a loaf of bread or those wonderful english muffins. Just set your mixing bowl on a scale, weight in your ingredient, hit the tare button and continue on with the next ingredient. No more messing around with measuring cups and it makes it so much more accurate!
Although this book is NOT yeast free, there are many recipes in there that don't require yeast. However I really, really wanted to try those english muffins. I emailed Tammy to see if she had any ideas on how to avoid the yeast. I didn't really expect a response but within a couple of days, there it was! She gave me a couple of suggestions that I tried and after only 3 batches, I think I have perfected the gluten/dairy/yeast free english muffin! Sure it's probably not as fluffy and airy as the yeast version but you know what? it's pretty darn tasty and even my husband likes them!
The other thing I love about this book is that Tammy shares my philosophy on food: as natural and unprocessed as possible. She even used coconut oil for cooking! yay!

I think this is a great book for anyone who has any gluten/dairy/egg/soy food sensitivities or allergies. It's even good for those who don't!

"The Healthy Gluten-Free Life" is a wonderful resource to those who are new to the gluten-free lifestyle or for people who would like to make their gluten-free meals more nutritious.

At the beginning of the book, Tammy shares her story about how her husband, playfully called "The Celiac Maniac", was diagnosed with celiac disease and how she and her children found that they suffered from a gluten intolerance as well. Inspired, she set out to create healthy gluten-free (also dairy-free, soy-free and egg-free) recipes for her family and is now sharing everything she has learned with the gluten-free community through this book.

As a "Gluten Intolerance Consultant", I am very pleased to see that Tammy has focused on healthy recipes to help promote healing in individuals with a gluten intolerance. Since many people with related intestinal damage can have nutritional deficiencies, it is important to include healthy flours and other nutritious ingredients in any gluten-free diet. Tammy has definitely included healthy options in her recipes.

As well as great recipes, Tammy also includes flour substitutions, discusses dairy and egg substitutes, cross contamination issues, tips for a happier kitchen, and has also included many other tips to help with a healthy gluten-free lifestyle adjustment. Thank you Tammy for this lovely contribution to the gluten-free community:)

I bought this book a few months ago because we have lots of food allergies in our house. My son is currently leading with gluten, dairy, eggs, soy, msg, aspartame and flax. The rest of us have a few each. This would all be fine if I were Tammy Credicott, but I can't possibly overstate how much I hate cooking. If my husband ever decides to quit cooking (please God, no!) I've decided I'm going to buy premium cat food and maybe do some juicing for variety. My kitchen will be spotless and I won't have to shop much for groceries. Having said that, since my husband does travel quite often (there's always a catch, isn't there?) even I eventually have to wander in to the kitchen. I'm really surprised...okay, astonished at how easy this whole cooking for allergies thing is. She explains which flours do what (rather interesting, actually), and the recipes actually work. You can imagine my surprise. I'm actually greatly relieved at finding this book because it's now the only one I go to. I appreciate her philosophy on the health of the ingredients she chooses as well. When we first started the gluten thing, I bought some pre-made stuff and was truly appalled at how much sugar everything contained. They should really include vials of insulin with some of that food, and who wants to trade unhealthy food for different unhealthy food? No, if I'm going to put any sort of work in, this better be healthy! Her recipes are easy, healthy and yummy. This book actually makes it very easy to eat well and I'm going to pick up another one for my son, who cooks like his mom (oy!). In a weird way, food allergies have made us healthier (and we were anything but junk food eaters before) and this book makes it do-able! I can't imagine anyone not being thrilled with these recipes.
