Book Description

Sep 7 2010
This is a beautifully photographed, detailed, one-of-a-kind collection of healthful, classic Indian recipes prepared in the slow cooker. This unique guide to preparing Indian food using classic slow-cooker techniques features more than 50 recipes, beautifully illustrated with full-colour photography throughout. These great recipes take advantage of the slow cooker's ability to keep food moist through its long cooking cycle, letting readers create dishes with far less oil and saturated fat than in traditional recipes. Anupy Singla shows the busy, harried family that cooking healthy is simple and that cooking Indian is just a matter of understanding a few key spices. Her 'Indian Spices 101' chapter introduces readers to the mainstay spices of an Indian kitchen, as well as how to store, prepare, and combine them in different ways. Among her 50 recipes are all the classics - specialties like dal, palak paneer, and gobi aloo - and also dishes like butter chicken, keema, and much more. The result is a terrific introduction to making healthful, flavourful Indian food using the simplicity and convenience of the slow cooker.

Review

"Of all the world's cuisines, India's is perhaps best suited to the steady simmer of a slow cooker...If you love Indian food, have a look at Anupy Singla's "The Indian Slow Cooker." Folded in with lush food photography are easy, healthful recipes with traditional flavors." --Lois White, "Better Homes & Gardens"
"My favorite new slow cooker book is The Indian Slow Cooker by Anupy Singla....Because Indian dishes are rich in spices and robust flavors, they stand up well in slow cookers. Singla actually developed the recipes specifically for the slow cooker so the techniques and ingredients work well in the machine." --Genevieve Ko, "Good Housekeeping," October 14, 2011
"Singla's book goes against what many believe is required of Indian cuisine--infusing hot oil with a whole mess of spices as the base for dishes. Instead, she argues, throw everything into the Crock-Pot and let the aromatics do their thing... the book gives old- and new-school cooks alike ample reason to give Indian food a shot." --Janet Rausa-Fuller, "Chicago Sun-Times," October 20, 2011
"Ms. Singla says her book is aimed at anyone who wants to eat more vegetarian food and she doesn't believe in calling Indian food 'spicy' or 'exotic' anymore." --"Wall Street Journal," India Real Time Blog, August 24, 2010
"[The Indian Slow Cooker] is slim in appearance, a mere 136 pages. Yet the author has packed its pages with 50-plus recipes, lots of guidance and enough enthusiasm for slow cookers and Indian food that fans of either or both will be prompted to try one of her recipes..." --Judy Hevrdejs, "Chicago Tribune," April 6, 2011
"Next time you have a hankering for Indian food, don't think take-out. Think ahead. That's the message from Anupy Singla, author of The Indian Slow Cooker who is on a mission to correct misperceptions about Indian food..." --Michele Kayal, "Associated Press," October 26, 2010
"In her friendly voice, Anupy Singla welcomes everyone into her k

5.0 out of 5 stars Just what I wanted Mar 28 2011
Format:Paperback|Amazon Verified Purchase
I am an Indian who has recently moved to Canada. My husband and I both have extremely hectic schedules, and consequently very little time to spend in the kitchen. At the same time, we love to eat home-cooked, nutritious meals.

We've tried various slow-cooker recipes in the past, but were looking for something that would help us achieve authentic Indian flavor. This book is just what we needed. The instructions are precise and detailed enough for a detailed-obsessed person like me. There are many little tidbits about varying things as per individual tastes, giving flexibility - again a big plus. The author has also taken care to include information about omitting ingredients for the health-conscious people who are averse to using too much butter or oil. I have tried several recipes given in this book, and I'm yet to be disappointed.

I would highly recommend this book to anyone who loves Indian food but is short on time or simply prefers using a slow cooker.

3.0 out of 5 stars Good but pricey Mar 8 2011
By Kate
Format:Paperback
Take note: this book is MUCH smaller and thinner than it looks, and only the last half of the book actually contains recipes. Considering how much it cost, I was a little bit put out.

That said, we've now made 3 recipes from the book, including the Spicy Squash and the Punjabi Eggplant, and they were spectacular. The book is also great as an alternative to all the slow cooker cookbooks out there that centre around putting a bit block of meat in the pot and adding a sauce. There's a huge depth of flavour in her recipes, and TONS of vegetarian choices.

5.0 out of 5 stars This book has changed my life! Feb 13 2011
Format:Paperback
Simply had to chime in with a 5 star review in the hope of offsetting the low review given by somebody who didn't even seem to try the recipes. This book has rapidly become a stand-by in my kitchen: we haven't been without at least a liter of one Singla's superb Punjabi style beans in the fridge since it arrived. For the adventurous it even includes instructions on making your own paneer, which is the cottage-style cheese often included in vegetable stews to delicious effect.

While some of the spices may be a little intimidating for some readers, most are readily available in a good bulk or grocery store and they serve to transform simple and cheap ingredients like beans, lentils, and chickpeas into healthful and tasty meals. I've also had fine luck substituting store brand curry powder for the bouquet of other spices like tumeric, cumin seed, and garam massalla called for in a recipe - you miss the nuances of flavor but it works fine in a pinch. It's true that there aren't a lot of pictures in the book, and avid carnivores beware as there aren't very many meat dishes here (though the ones I've tried so far have been amazing), but not one of the recipes I've tried has let me down yet.
