Book Description

July 19 2011

The ketogenic diet, which is very high in fats and low in carbohydrates, was first developed almost 80 years ago. It makes the body burn fat for energy instead of glucose. When carefully monitored by a medical team familiar with its use, the diet helps two out of three children who are tried on it and may prevent seizures completely in one out of three. It is a strict diet, and takes a strong commitment from the whole family. The ketogenic diet is not a do-it-yourself diet. It is a serious form of treatment that, like other therapies for epilepsy, has some side effects that have to be watched for.

The Keto Cookbookis a cookbook for those using the diet to treat epilepsy and other neurologic conditions. The book contains 96 recipes grouped by breakfast and brunch, appetizers & snacks, lunch, dinner, and sweets and treats. The book includes a 16-page color insert illustrating each recipe. Since many children start the Keto Diet before they speak, the pictures of the meal and snack options allow children to choose what they want, helping overcome food refusal due to lack of variety of foods and/or child's loss of control over food options. This book provides parents and children with options that have been tested and are kid- and Registered Dietitian- approved.

Features ofThe Keto Cookbookinclude:

  • 96 kid and dietitian tested and approved recipes for the keto diet presented in full color
  • Recipes are coded by symbol to indicate personality type and cooking times
  • Allergy information for the eight most common allergens
  • Practical suggestions to help people "keto-proof" their life, from the kitchen, to the car, to the classroom.
  • Four sample shopping lists and vacation guidelines will help families prepare for the unexpected
  • Sample forms for the Transportation Safety Agency, School/Daycare Center, and Emergency Room/Primary Physician

1.0 out of 5 stars Poorly written book. Mar 30 2013

Recipes and nutritional information is broken down in tiny portion sizes...8 grams of tuna, 3 grams of mayo. This is extremely impractical.

4.0 out of 5 stars Helpful, even to veteran Keto users Sep 6 2011
By T. Goodmanson - Published on Amazon.com

My son has been on the Ketogenic Diet for epilepsy for over 3 years (as a note, this product is focused on those who use the Ketogenic Diet for medical reasons...not body builders or those who wish to reduce). He's pretty picky and I've spent a lot of time and trial and error finding meals which will work for him.

This book is written by a dietician and a mother who has a child on the diet. There is a lot of experience written into this book, including how to organize your kitchen to help your child get used to the diet (not leaving things that they can't have in the open), what tools are handy, letters to caregivers/schools, and what kind of food preparation works best in an emergency (no stores or electricity).

One of the best things about this book is that all of the recipes work around the usual cream + a meal or oil + a meal. Many kids get tired of that but there seem to be few meals which can accept the fat load necessary for a keto meal. This book works to create recipes with the fat in the meal.

Recipe highlights include:
breakfast cookies
pigs in a blanket
fruit pizza
microwaved bacon and eggs
protein waffle
chicken nuggets
quesadilla with creamy avocado dip
cream of chicken soup
tacos
bake and freeze pizza
spaghetti carbonara
spaghetti alfredo
pork stir fry with ginger cream soda
broccoli, bacon, and blue cheese melt
no-bake tropical cream cheese bars
apples and peanut butter dip
no-bake chocolate snack bars
dairy-free yogurt (and parfaits)
fudge popsicles
vanilla cupcakes

There are 96 recipes with a good mix child-friendly and slightly-more-adventurous. Most of those recipes (@60) have a full color photo at the beginning of the recipe section. My son loves this. He can chose a recipe to try by the picture, and I can see how it's supposed to turn out when I'm done. There's also an attempt to have a few recipes for children who can't drink dairy products (dairy-free yogurt, dips with oil and mayo). Most keto sources leave out that small segment of the population.

Things to know before you buy:

*all recipes are based on a 4:1 ratio/400ish calorie meal. You will have to tweak these (or have your own dietician tweak them) on your keto calculator.
*even if you are using a 4:1 ratio, etc., the meals are protein heavy. If your dietician has you set for a more equal protein/carb balance, then you'll have to eliminate some protein here and add some carb. This may change the way the meal looks or its texture
*if you have a 3:1 or smaller ratio, this book may be meaningless to you. It still makes a good resource but more for ideas then actual recipes.
*the author uses Truvia powder for sweetener. If you use Splenda, saccarine, or Stevia (liquid or powder), you will have to adjust the amounts according to taste.
*the author uses 40% cream and European butter (not available everywhere). They have have higher fat content so subbing 36% cream or American butter will mean a few extra grams.

All in all very worth the purchase price.

5.0 out of 5 stars Loved the Recipes, Well written Guide to the ketogenic diet July 13 2011
By Gregory M. Speed - Published on Amazon.com

Thank you for such a wonderful book. I have a granddaughter who has been on the ketogenic diet for the past year. I have struggled to understand the diet, along with its exacting details of fats, proteins and carbs, weighed out in grams, in a 4 to 1 ratio. This book clearly provides menus and wonderful pictures of food (for breakfast, lunch and dinner), already balanced in proper ratio. (4:1). I have purchased this book, not only for myself but for my family so that when our granddaughter visits, we can properly feed her. This book helps one realize that the diet is essentially medicine, not just food when properly calculated in calories, & grams of protein, fat and carbs. I know that many families and especially, moms, will be well served by this book.
The other review was off base. I checked the index. It does seem to be out of sync and should be fixed by the publisher. However, the Table of Contents and the pictures of food do sync with the proper pages and menus described. It is silly to judge a book by its index and not content. As I said, this book will be a god-send to families with an epileptic disorder.

4.0 out of 5 stars Great Book Badly Edited Jan 2 2012
By Wendy G. Anderson - Published on Amazon.com
Format:Paperback
I would love to give this book five stars. I really would. But I'm a professional editor, and whoever copyedited this book needs to give the publishers their money back. For example, in every single place where the author refers to the aisle of a supermarket, it's an "isle." And that's not the only misspelling I noted. The indexing is just as bad. It's VERY distracting and seriously detracts from what would have been an otherwise remarkable and outstanding book. (It also makes me worry about their attention to detail in more crucial areas, like the recipe measurements...) Note to demosHealth: If you need a good editor, call me.

Pet peeves aside, I LOVE this book. My family does not deal with the severe forms of epilepsy that the ketogenic diet is designed to treat, but my children and I all suffer from severe migraines and I have a glucose processing disorder, so we follow a higher fat, lower carbohydrate diet than most of the general population. I was curious to see what tips and tricks I could pick up from people for whom carbohydrate is, essentially, poison.

The recipes that I have tried have been delicious. The authors were successful in their attempt to minimize carbohydrate content while maximizing flavour and visual appeal. The sample letters for various community contacts who may be responsible for a child's meals during time away from a regular caregiver will be an excellent resource for parents who need to communicate the severity of a seizure disorder to non-medical personnel. And the spaces for a family's dietician to write in measurements as they work together to tweak recipes to a child's individual needs will obviously be invaluable.

The ONLY drawback I see to this cookbook for non-keto families is that the recipes generally make only one serving, and all the measurements are in grams. I understand the reasons why, but non-keto shoppers should be aware that you're going to have to do some math and some measurement conversions to make these recipes work for a family.

That said, I highly recommend this cookbook as a resource for families struggling with epilepsy disorders, glucose disorders, and gluten intolerance, as these recipes will be a godsend to all of them.
