I know of nothing better than the trout my mom makes using a sweet, cornmeal, cooked over a camp fire or stove!

This cookbook has this style, plus just about every other one can imagine, sauteed, stuffed, barbecued, in soup, as dip, steamed, salted, pickled, as a roe.

There is a section on "go-withs" e.g. hushpuppies, etc. There is even recipes as burgers, stews, seviche, etc.

I'm especially fond of the Lake Louise recipe as well as the Irish Trout wrapped in paper, etc.

Not the most creative of recipes for trout, but well worth investment used or at a bargain rate like I acquired. Much to try and be inspired by.

If I were a fish that had been hooked and yanked forth into the cold, cold air from my watery home, I would have one consolation: my subjugator might cook me using AD Livingston's book. I'm not a fish, though, and so I may enjoy the eating of these finned monsters of the deep without sticky concerns of cannibalism, and Livingston's book helps. Although it's perhaps not for the faint of heart, it is a very good book...about fish...and eating them. AD Livingston, we salute you!
