JAMIE PURVIANCE is one of America's top grilling experts and Weber's master griller. WEBER GRILL: The year was 1952. Weber Brothers Metal Works employee George Stephen Sr. had a crazy idea. This book is my number two go to smoking and grilling book. There is a beer brine recipe that I use for pork chops all the time. Brine, rinse and freeze. My wife never ate pork chops before and now its the only way she will eat them. Now the words "I want pork chops PLEASE" are heard in the house as soon as the snow is knocked off the grill. I use a dark beer and today I used Guinness as it takes the chops to the next level. Make sure they are in the brine no more than 48 hours and that they are rinsed off well when they come out of the brine. If not they will be a little salty. Brush with a little olive oil and sprinkle a little S and P.. good hot grill and Bob's your uncle!

We bought this to accompany our Weber Smoky Mountain 18.5 inch. Seems there are not many reciopes in there specifically designed to go with the smoker...most are for smoking on your BBQ. The pork roast recipe was delicious though, and there are great tips in there for the beginner.

I bought this book mainly for the recipes, and it does not disappoint, it has sections on everything from appetizers to simple and medium (nothing to complex) recipes for meat, poultry, and fish as well as a section on vegetables and sides. There are also great tips provided throughout this book. For the novice it covers smoking basics and a resources section with topic like safety, USDA and chef standard temperature, and metric equivalents. This book is a great addition to my ever expanding “smoking” library.

Great book. Excellent recipe examples for pork, beef, chicken and others. Also recipes for rubs, brines etc. and 70 or so pages total. Also goes into brief summary of types of wood to use in your smoker, types of smokers and various tips. A great read with lots of useful information. If you have a smoker, were thinking about a smoker or looking for ideas with your smoker - get this book!

Sadly, this book is full of readily-available information accessible for free on the 'Net. I have been a fan of Purviance's previous books...but I feel he is trending towards rehashing information he's already written about.
