With this book, you will soon develop the skills and confidence to prepare these and many other classics with ease. Williams-Sonoma Mastering Frozen Desserts offers a complete cooking course in a single volume. The opening pages describe the most popular types of frozen desserts to make at home, from ice cream, gelato, and sherbet to sorbet and granita. The basic recipes and key technique sequences illustrate dozens of indispensable culinary building blocks, such as caramelizing sugar and filling a pastry bag. Troubleshooting tips show how to avoid common mistakes, and how to fix them without having to start all over again. The recipes lead you step-by-step, with easy-to-read text and instructive photographs, through each stage of preparation for everything from simple ice creams and sorbets to complex tortes and plated desserts. The variations in each chapter encourage you to continue practicing your newfound skills, building your recipe repertory and your confidence at the same time. Finally, an illustrated guide to equipment and a glossary of ingredients will help you stock your kitchen with all the essentials. In these pages, you will find more than fifty classic recipes that tell you, in both pictures and words, how every dessert you make should look and taste from beginning to end. Whether you are an aspiring novice or an accomplished dessert maker, this book will help you fill your freezer with special endings for every occasion.

5.0 out of 5 stars Cool Recipes in a Cool Cookbook! July 10 2006
By Monita Olive - Published on Amazon.com
Format:Hardcover
"Frozen Desserts" is a fairly large cookbook, but that's o.k. because so is the dark font the publisher used for tired, old eyes like mine. That, and the photo of the strawberry ice cream on the front of the cookbook is what initially sold me. The added bonus was all the info on the types of recipes included, how to serve, how to store, basic recipes, key techniques, and then all the "fancy" recipes for ice cream and gelato, sorbets and granitas.

There is even a section of key ingredients and tools for making all the recipes. The photos are professionally done and will make you want to try every recipe. I was not disappointed with the Strawberry Ice Cream that I made and enjoyed on Mother's Day! I still missed having my kiddos with me, but the ice cream helped comfort me that day. We'll have to plan to make the Pistachio Gelato or the Chocolate Sorbet when they are here again.

You'll find Frozen Desserts in Williams-Sonoma. It is one of their "Mastering" series and the ISBN number is 13:978-0-7432-7106-6 Copyright 2006

I love this book. The chocolate ice cream recipe turned out phenomenal! (Better than Haagen Daaz!) The trick is to make the ice cream mix the night before and have one of the new canister style ice cream makers.
