This book was written to celebrate an amazing chef, but regretably not to pass on the passion. Most recipes require very specialist skills and ingredients. The skills take years and the unusual ingredients are never sourced. "See Glossary list & Specialist stores" are not very helpful. Sure no compromise is made by this very gifted man in attaining a professional result, but if you write a cook book it is to share the joy of baking. In this respect he fails. All hail the pastry God, but this book will remain unused and the recipes largely unworkable by us mere mortals.

This book as other reviewers have said is not for the home cook, for example the 'chocolate slice' recipe calls for approximately 7 different layers of ganaches and mousses! However if you were to say make it with 3 layers it is do-able. Same with other recipes where individual components work well, i.e. the profiteroles for the croquembouche are delicious by themselves without the elaborate caramel and assembly steps.

The macarons are nice but you can get the recipes by getting the Zumbarons book. It is half the price and deals only with what many people go to his store to get, the delicious macarons. That book also contains basin macaron recipes which work every time before you begin to branch out into the weird and wonderful.

I bought this book primarily for the macaroon recipes as that is generally what this cookbook bases it's merits on. Having followed the instructions carefully I produced my first batch - a disaster. I tried a second, third and fourth time and this is where I have decided to draw a line in the sand. The recipes themselves are badly written, lack description and the results were far from what was promised, which to me says it fails as a cookbook. Based on the communication and the results of cooking first hand, don't waste your time. If you're after a book with magic and mystery, the fat duck cookbook is the way to go. Zumbo has stolen the ideas of Heston but without any of the creativity or clear instruction. Yes Heston's book is much more complicated, but when I've cooked from there, I have achieved the same results perfectly every time. To be plain and simple, avoid Zumbo - the books, the shows, the DVD's and his shop because quite frankly, he isn't worth it.
