This ambitious book includes a long introductory secton on equipment, ingredients, and culinary terms, dozens of sidebars devoted to cooking questions, and pages of tips on all sorts of kitchen matters, as well as several hundred recipes. Groveman, a dedicated cooking teacher, has appeared on many of the morning TV shows; while her text is sometimes a bit syrupy and her recipe titles too cutesy, she knows her stuff. The recipes are sophisticated and satisfying, but many require a fair amount of time; there are advance preparation instructions for each dish. The impressive amount of information presented here makes this a valuable reference-and the author's television appearances should ensure demand.
