I have Lindsay Nixon's first two cookbooks and love them. The third book is awesome! Simple recipes, as with the other two, with worldly tastes. But it's not complicated at all! Perfect for a busy home. The layout of this book is very eye catching (with lots of pictures <3 ) and the index is easy to find recipes with what you have on hand. I have improved my health greatly by cooking with Happy Herbivore's meals and following tips on the blog. Thank you Happy Herbivore for another wonderful cookbook :)
I have Lindsay's first book Happy Herbivore, as well as Everyday Happy Herbivore. I love them both, they are the only two cookbooks that I keep out of my cupboard on a constant basis. The recipes are so simple and delicious! I flip through the book regularly and read the recipes to plan meals for the week without becoming discouraged or intimidated (like a lot of cook books) since there isn't huge ingredient lists or complicated cooking methods. I usually have the ingredients on hand and it is easy to make substitutions with most recipes.

I love everything about this book, it's so simple, yet delicious and it's healthy! Can you get much better?! NO. I've tried quite a few vegan cook books, but usually give up after a few recipes as they are too complex or not as healthy as I'd like. I've loved every recipe I've made and can't wait to try them all. The vegan cheesecake and chocolate cupcakes have made others buy this book as well!
