This is likely the most comprehensive Optical Mineralogy text book out there, it has good explanation of the concepts and material as well as having a fairly complete data set of mineral optical properties. There are other books that have a broader range of minerals and their properties but unless you are planning to go farther than the undergraduate level is not necessary.
