I was so excited to get my copy of Let Them Eat Vegan in the mail last week! I had been looking forward to trying the recipes for months! There are so many great recipes to choose from and I especially appreciate that the focus is on whole foods, nuts, veggies and wheat or gluten free options ... I am inspired by Dreena's commitment to plant based cooking and I can't wait to try all the recipes. So far, I've made Coconut Banana Muffins and Almond Roasted Cauliflower... Yum! Even my non-vegan friends would love these dishes!
