One could certainly be forgiven for the treasonous suspicion that a cookbook called Great Canadian Cookies would turn out to be nothing more than a pamphlet. But darned if baker, author, and food columnist Pamela Steel doesn't manage to pull off a Snicker Doodle dandy--a confident and breezy collection of almost 200 cookie recipes that manages to cream together patriotism and preheating of the oven. From coast to coast--here defined as Cornwall, PEI's Stained-Glass Window Cookies, to Canmore, Alberta's Mocha Oatmeal Cookies (sorry, British Columbia: there's not a Nanaimo bar in sight on these pages)--Ms. Steel runs the galette from Almond Macaroons to Yule Logs, while her willy-nilly chapters comprise everything from Canuck geography to finalists in the Web's "Great Canadian Cookie Contest" to recipes using peanuts and chocolate chips. The recipes are one-page wonders and delectable demonstrations of the difference between the artistic craft of cooking (allowing "a lot of leeway for sudden bursts of inspiration") and the scientific, weights-and-measures-specific demands of baking. With introductory pages referring to such subjects as cookie history--yes, that Dutch koekje may just have spawned the Linzer square--and the Cookie Commandments (Thou shalt not overmix, "Use pure vanilla extract"), the Great Canadian Cookies recipe compendium is sure to milk a collective sweet tooth. --Tony Mason
